Pulled Pork

Recipe – Charlene K


BBQ sauce

Tomatoes ketchup – 1.5 cups
Bourbon or whiskey – 2 cups (Don’t skimp now) / consider burning off alcohol
White vinegar – 1/2 cup
Brown sugar – 2 cups
Worstershire sauce – 6 tbsp
Bay leaves – 4
Cumin power 1.5 tsp
Corriender powder – 1tsp
Black pepper – 3 tbsp
Fresh ginger – 5 tbsp
Garlic – 1 bulb
Thyme – 1tsp
Oregano – 1 tbsp
Liquid smoke (Hickory) – 4 tbsp
Chicken powder – 2 tbsp
Dried red chilli – 10 (Deseeded)
Paprika – 1 tbsp


Pork

*Pork shoulder or Boston Butt – 8 Lbs
*Homemade Bourbon BBQ sauce – 4 cups (see recipe below)
* Water – 1 cups

1. Wash and trim our pork into large 4 inch cubes. (keep fat)
2. Wash and soak the pork in water for about 30 mins changing the water every 5 mins to remove as much blood as you can.
4. 4 cups BBQ sauce into a pot or pressure cooker plus 4 cups boiling water (half that if using pressure cooker)
5. Cook 40 mins. Pull apart with forks
